Some of the most exquisite wines have emerged from cellars that, on the surface, seem far from pristine. Take a cellar in Champagne, for example; it is so immaculate that I wouldn’t hesitate to eat off the floor. On the contrary, I have also savored remarkable wines produced in the most moldy and dilapidated-looking cellars, complete with decrepit barrels. This apparent contradiction leads me to believe that the definition of "clean" in the context of wine production is subject to interpretation. Among the many views to celebrate, I find particular enjoyment in the graphic quality of the spaces in which these wines are crafted, illustrating that the artistry of winemaking transcends surface appearances.
