“Our culinary philosophy is about celebrating the unique qualities of our wine in ways that are restrained yet surprising,” Koenig shares. He emphasizes the importance of seasonality and strives to create dishes that go beyond traditional pairings. Instead of solely relying on classic options like steak with cabernet, he sources fresh ingredients from the estate’s gardens to craft innovative pairings.

One standout dish is pâté en croûte, a classic French delicacy reimagined with local ingredients such as quail, chicken, and pork sourced from nearby farms. This reflects the restaurant’s commitment to integrate traditional techniques with contemporary Northern California cuisine, honoring its Franco-American heritage.

Koenig stresses the intuitive nature of their pairing process. Each vintage demands a tailored approach, either harmonizing with or contrasting the wine’s flavors. This method enhances the overall tasting experience, encouraging guests to broaden their perceptions of food and wine pairings.

Opus One offers a variety of tasting experiences, ranging from a $125 Estate Tasting focused on the core wines to the immersive $650 Art of the Table lunch that features a four-course meal designed to showcase the synergy between the kitchen and cellar.

Beyond wine and food, Opus One prioritizes sustainability, evident in its Napa Green certification for both the vineyards and winery, reflecting a commitment to responsible stewardship.
