Originally opened five years ago in Syracuse, New York, the first Saint Urban garnered praise for its wine program from Wine Spectator. The new location in Manhattan’s Flatiron District honors its culinary roots, as Chef Jared Stafford-Hill previously worked at the renowned wine-centric restaurant Veritas. The restaurant’s monthly themes allow patrons to feel transported to various wine regions with each visit.

At the launch, the featured region was Côte de Beaune in Burgundy, showcasing dishes fused with local flavors paired with exquisite wines from the area. A tasting menu involved seven courses with varied wine pairings, presenting highlights such as a Meyer Lemon-Cured Danish Hiramasa and Beef Duo Bourguignon, all thoughtfully matched with premium wines.

Following Côte de Beaune, other regions like Spain, Tuscany, and the South of France are highlighted, offering dishes rich with flavor, paired with selections from local vineyards. Upcoming months target Côte de Nuits, Piedmont, Bordeaux, and even California wines in January.
