Vinography Images: Unraveling the Mystery Behind the Lens Chris Lehoux, October 17, 2025 The town of Reims, situated in France, conceals an extensive network of caves carved from limestone beneath its surface. These caves are filled with rows of riddling racks housing countless bottles, as well as vast stacks of completed bottles. Historically, during the Second World War, the caves served as shelters for the town’s residents from enemy airstrikes. In the process of making Champagne, a technique known as riddling is employed. This involves gradually shifting a Champagne bottle from a horizontal position to a vertical one, allowing the yeast residues to collect in the neck of the bottle. This residue is later expelled during the disgorgement process, which is a key step in producing fine Champagne.
