Beachwood in Huntington Beach Pays Tribute to the ‘Father of Wine Country Cuisine’ Chris Lehoux, October 24, 2025 Beachwood Pizza & Beer in Huntington Beach is paying tribute to the late Chef John Ash, a pioneer known as the ‘father of Wine Country cuisine,’ by incorporating dishes inspired by his influential cookbook, "From Earth to Table." This special menu will be available at their Huntington Beach location from October 23 to November 2. Chef John Ash, who passed away in August at the age of 83, was celebrated for advocating sustainable cooking that highlights local, seasonal ingredients, particularly the wines of Sonoma County. His legacy includes founding the restaurant John Ash & Co. To honor him, Beachwood is introducing three limited-time dishes: an Earth To Table Sourdough Pizza topped with Bechamel sauce, mozzarella, Dutch brie, Canadian bacon, portabella mushrooms, and caramelized onions; a Wine-Braised Chicken Orecchiette featuring a creamy sauce with shiitake mushrooms, sun-dried tomatoes, and Parmesan; and a Spiced Wine Poached Pear for dessert. Head Chef Ashley Arias noted how Ash’s work influenced her culinary approach. "I looked at the book and what ingredients he was using… this is a good foundation," she said, while adapting recipes to create unique flavors that reflect Ash’s philosophy. Beachwood’s owner, Gabriel Gordon, spoke warmly about Ash’s impact on his cooking career, recalling him as a legendary figure and a personal mentor.
