Carbone Riviera: Las Vegas’ Newest Culinary Gem Opens Its Doors Chris Lehoux, November 13, 2025 Carbone Riviera has officially opened its doors at the Bellagio Hotel and Casino in Las Vegas, taking over from the erstwhile Grand Award-winning restaurant, Picasso. This new establishment, which opened on November 7, is brought to life by the Major Food Group, known for its successful ventures like the Grill and Carbone in New York City. The restaurant shifts focus towards seafood, featuring an extensive menu inspired by Italian coastal cuisine, while still incorporating some of the beloved dishes from the original Carbone. It offers diners a picturesque view of the infamous Bellagio Fountains, complemented by a waterfront terrace designed for al fresco dining. Carbone Riviera boasts a massive wine list of 1,365 selections, with a strong emphasis on French, American, and Italian wines. Douglas Kim, the executive director of wine for MGM Resorts International, highlighted the restaurant’s seafood-centric approach that allows for a variety of elevated white and sparkling wine offerings, including 75 choices of Champagne available by the bottle. The dining experience is anchored by a variety of dishes, with an impressive selection of whole roasted fish that is prepared table-side. Star items include Dover sole, turbot, and branzino, which can be grilled over Japanese charcoal or baked in a salt crust. Notable signature dishes such as spicy vodka sauce rigatoni and Caesar salad "alla ZZ" remain on the menu, bridging the new concept with the origins of its predecessor. The ornate interior, designed by Martin Brudnizki, seats 240 guests and reflects a fusion of swirling earth tones with gold accents and polished marble surfaces. Guests can also enjoy the unique feature of a 33-foot yacht named Fortuna that offers private tours around the lake of the iconic Bellagio Fountains, embodying the luxurious lifestyle often associated with Lake Como. In another development, Danny Meyer’s Union Square Hospitality Group announced its plan to debut new restaurants in Detroit in 2026, marking the group’s first expansion into the Midwest. This initiative is part of the Hudson’s Detroit project, a large mixed-use development forecasted to enhance the city’s culinary scene. Meyer emphasized the vibrant culture and creativity of Detroit as key factors enticing them to establish a presence there.
