Eleven Madison Park Reintroduces Meat: A New Chapter for the Iconic Restaurant

When Eleven Madison Park reopened in 2021 after being closed for over a year due to the pandemic, chef Daniel Humm introduced an entirely plant-based menu. This bold move was aimed at sustainability and was met with mixed reactions, yet it helped retain the restaurant’s renowned status, leading to retaining three Michelin stars and becoming the first establishment to achieve this with a plant-based offering.

However, beginning October 14, the restaurant will reintroduce meat into its menu, which reflects a shift towards inclusivity. Humm noted that the previous plant-based-only approach inadvertently alienated meat eaters, and as a chef, his goal is to keep culinary doors open rather than close them. Financial considerations also play a role in this decision; there has been a decline in wine sales and event bookings, as many wine enthusiasts prefer pairing wine with meat dishes.

The updated tasting menu will remain predominantly plant-based but will now include some meat and seafood options, such as lobster and the previously featured honey and lavender glazed duck. A vegan tasting menu option will still be available.

In related restaurant news, Thomas Keller has launched "Burgers & Half Bottles," a pop-up restaurant in Yountville, California. This casual eatery offers American fare, including American Wagyu burgers and fried chicken sandwiches, along with wines from a selection of local Napa and Sonoma producers. The pop-up, which stays open until Halloween, serves on a walk-in basis and has quickly gained popularity among locals and tourists alike.
