Unveiling The French Laundry’s Wine Program: A Tailored Experience for Every Guest

Chris Lehoux, July 27, 2026

Nestled in the vibrant Yountville of California’s Napa Valley, The French Laundry stands as a pinnacle of fine dining. Since Chef Thomas Keller acquired the restaurant in 1994, it has garnered countless accolades, including three Michelin stars for nearly two decades. The restaurant is not only known for its exquisite cuisine but also for an innovative wine program that tailors each guest’s experience individually rather than relying on fixed pairings.

Andrew Adelson, head sommelier, plays a vital role in this personalized approach. Growing up in Los Angeles, Adelson’s restaurant career began at the age of 14, and it took a significant turn when he joined the Grand Del Mar Resort in San Diego in 2008. Under the mentorship of a wine director, he honed his skills in all aspects of wine management and service. His journey brought him to The French Laundry, where he assumed the head sommelier position in 2020 during the pandemic—a role he’s deeply passionate about.

The French Laundry boasts one of the world’s most extensive wine cellars, housing thousands of selections from renowned regions including California, France, and Italy. Adelson emphasizes that the uniqueness of their wine list lies in access to exceptional wines that may not be available elsewhere. Instead of a fixed wine pairing, the team crafts personalized selections based on guests’ preferences, experiences, and occasions. This dialogue begins with a simple conversation where guests’ tastes are mapped out, allowing the sommelier team to assemble bespoke pairings.

The collaboration between the kitchen and sommelier team is also emphasized, allowing both parties to refine dishes and wine pairings—including adjustments to sauces or the order of courses—ensuring harmony between food and wine. For instance, the legendary Sauternes, Château d’Yquem, is sometimes paired innovatively with savory dishes instead of the traditional dessert, showcasing its versatility when thoughtfully combined with food.

Adelson believes that just as the kitchen adapts to seasonal produce, the wine program should reflect the seasons as well. Whether featuring Grüner Veltliner in spring or Barolo in autumn, the wine list evolves to complement the changing menu—a reflection of the farm-to-table philosophy embraced by The French Laundry.

The beverage program extends beyond wine, featuring a curated selection of rare spirits and premium sake, highlighting the restaurant’s commitment to enhancing guests’ overall dining experience. Adelson often introduces IWA 5 sake, crafted by a former Dom Pérignon chef, as a delightful pairing with seafood, showcasing the restaurant’s innovative spirit.

Ultimately, the true strength of The French Laundry’s wine program lies not just in its remarkable selections, but in the personal connections and collaboration that shape each meal. Every pour begins with attentive listening, teamwork, and an understanding that bridges wine choices with individual guest experiences, transforming an extraordinary meal into an unforgettable occasion.
