Are Your Wine-Drinking Habits Sabotaging the Experience? Expert Insights Revealed

Chris Lehoux, August 13, 2026

If you’re looking to fully appreciate the nuances of wine, you might want to rethink your habit of drinking water before or between sips. According to Sarah Looper, a New York-based sommelier and wine educator, this common practice can interfere with your wine-tasting experience.

Looper suggests that anything you consume before tasting wine can change your perception of its flavor. She explains that your initial sip of wine establishes a baseline for what you should expect from it. To genuinely understand a wine’s profile, she recommends taking multiple sips to get adjusted to its unique characteristics. Notably, the act of smelling wine enhances the tasting experience since our sense of smell is integral to flavor perception.

The process she describes is known as retronasal olfaction, where aromas from the wine reach your nose through the back of your throat, amplifying flavor perception with each sip. Moreover, everyone’s palate is different, affected by individual differences in oral pH and taste sensitivity. Looper advises that consuming overly sugary or acidic drinks before wine tasting can significantly influence how wine tastes to you.

"Patience," Looper insists, is key. Instead of grabbing for water to cleanse your palate, she suggests taking your time between sips. Allowing time for your palate to settle can heighten your ability to appreciate the wine’s evolving flavors, which change as the wine interacts with oxygen after being poured.

On days when she’s engaged in professional wine tasting, she follows a personal routine similar to athletes preparing for a game. It involves brushing her teeth and resetting her palate with coffee before moving on to taste wine, ensuring that she’s not introducing any foreign flavors beforehand.

While hydration is crucial, Looper emphasizes that taking a moment to absorb the first sips of wine is more critical than immediately drinking water. She recommends smelling the wine first, savoring a small sip, and allowing it to linger on your palate before taking another, thus embracing and enjoying your personal preferences and finding joy in the tasting process.
