Sip in Style: Exploring Portland’s Wine Bar Inspired by Vampires, Taylor Swift, Bridgerton, and More! According to owner Jeffrey Weissler, his mission is to make wine enjoyable and accessible. By transforming the way wine is discussed, he emphasizes pairings that utilize familiar terms that people connect with emotionally or intellectually, rather than relying on the daunting and often unclear terminology found in traditional tasting notes. This innovative approach has led to a diverse array of wine pairings that celebrate various themes, including hit television shows like Bridgerton, popular fantasy series, the Portland Trail Blazers, and even notably, the experiences associated with menopause. We have embarked on a quest to discover some of the most creative or unexpected ways to savor delightful, local wines. Pairings, with its lively and distinctive approach to wine enjoyment, made it to our list of extraordinary wine experiences in the region. During the summer, we attended the bar’s Taylor Swift Lovers wine flight event. Each flight featured eight wines that correlated with Taylor Swift’s most significant relationships – from past boyfriends to former best friends, culminating with her current partner, Travis Kelce. If you visit on a weekday evening, we suggest sharing a flight. The servings are ample, and we had to think ahead about our responsibilities the next day. Throughout the year, Pairings presents a diverse selection of themed flights. This month, in celebration of the spooky season, the wines will be paired with ‘sexy vampires’ from various pop culture references – spanning from Twilight to Vampire Diaries and even works by Anne Rice and others.
