Uncorking History: Archaeologists Successfully Recreate the Taste of Ancient Roman Wine

Archaeologists have uncovered insights into the taste preferences of ancient Romans regarding their prized beverage, wine. Through comparative analysis of ancient dolia—clay containers used for winemaking in Roman times—researchers Dimitri Van Limbergen from Ghent University and Paulina Komar from the University of Warsaw have shed light on how wine was produced and enjoyed two millennia ago.

Contrary to popular belief, Roman wine was not just a simple drink but a complex concoction that included a spicy flavor profile reminiscent of toasted bread and walnuts. This revelation comes from their study published in the journal Antiquity, which reveals that Roman winemaking techniques led to richer and more stable wines than previously known. The dolia operated as both storage and production vessels, enhancing the wine’s flavor as it matured.

Van Limbergen pointed out that the extensive use of dolia across the Roman Empire, particularly from the second to fourth century AD, indicated a sophisticated wine industry with skills that remain unparalleled in later periods. Roman wines were diverse, showcasing a spectrum of colors from yellow to deep red, depending on the grape varieties and processing methods used.

Additionally, the narrow bottoms of the dolia played a key role in separating grape solids from the liquid during fermentation, contributing to the unique orange hue characteristic of some Roman wines. This analysis is notable as it marks the first detailed examination of how winemaking techniques and materials affected the final product, drawing parallels with modern Georgian practices.
