How AI is Transforming Winemaking and Revolutionizing Wine Collecting

When it comes to wine, AI is emerging as a crucial ally for enthusiasts. A recent study by Festa G. and colleagues (2025) explored the transformative impact of AI on wine production, revealing its potential to enhance the wine experience. For many wine lovers, including the author’s husband, the sensory intricacies of tasting wine are deeply intertwined with emotional and memory-related brain functions.

The study examined how the brain’s orbitofrontal cortex processes sensory information, feelings, and memories tied to wine, highlighting the complexity that makes wine tasting so rich and personal. This intersection of neuroscience and viticulture presents both opportunities and challenges regarding AI’s involvement in the industry.

Researchers surveyed 31 Italian wine professionals about their attitudes toward AI, challenging stereotypes about traditionalist resistance to technology. The results showed that nearly 29% of respondents were already using AI for tasks like monitoring grape health and managing logistics, with strong expectations that AI will further permeate the industry within the next five years.

The study identified six innovative applications of AI in winemaking:

  1. Human-Machine Collaboration: Intelligent dispensers catering to individual preferences were rated moderately useful.
  2. Smart Materials: Sensor-enabled wine labels that monitor conditions garnered higher marks, addressing consumer anxiety about wine quality.
  3. Digital Twins: Virtual simulations for decision-making received more hesitance but were still seen as promising.
  4. Intelligent Winemaking: AI helping with harvest timing and aging received moderate scores, showing some skepticism about relinquishing key artistic choices to technology.
  5. AI Tasting Systems: These were perceived as the least useful because tasting is highly subjective and personal.
  6. Environmental Management: AI interventions that manage exposure to climate fluctuations were the most appealing, with respondents showing considerable enthusiasm.

The findings indicate that wine professionals prefer AI as an aid in environmental management rather than as a substitute for creative or subjective processes, particularly those tied to taste and personal experience. They believe AI’s role should be to protect against climate threats and facilitate sustainable practices rather than attempt to replicate the human sensory experience.

In conclusion, the study suggests that the wine industry may be an ideal sector for implementing AI systems that enhance rather than replace human skills. By complementing human expertise while respecting emotional and aesthetic experiences, AI can thrive and bring sustainable practices to the forefront of winemaking.
