AI Revolution: How Technology is Transforming the Wine Industry

Chris Lehoux, April 12, 2026

Scientists at Queen Mary University of London (QMUL) have developed a revolutionary AI-powered device known as "RipenAI," designed to enhance the efficiency of wine production. This handheld optical sensor offers immediate and precise data on grape ripeness, crucial for timing the harvest accurately.

The rapid nature of grape harvesting makes this technology significant. The device employs advanced machine learning to analyze how grapes absorb and reflect light across various wavelengths. As grapes ripen, their chemical makeup changes, influencing their optical response. Through AI algorithms, the sensor can determine ripeness without damaging the grapes, which accelerates the process and improves accuracy, according to researcher Xuechun Wang.

RipenAI is portable for manual use by vineyard workers but can also be permanently installed to monitor vine conditions continuously. This innovation comes as part of a broader project that aims to incorporate the technology into a robotic grape-picking system, in collaboration with Extend Robotics and Saffron Grange Vineyard.

Nick Edwards, director of Saffron Grange Vineyard, emphasized that the timing of grape harvesting is one of the most crucial decisions winemakers face. Proper monitoring of sugar levels and acidity during the growing phase helps in selecting the ideal harvest window, which depends on various factors including grape variety and local climate conditions.

With RipenAI, winemakers can repeatedly assess the same grape clusters throughout the ripening process, providing a more comprehensive understanding of ripeness than traditional sampling methods. This capability not only aids in producing higher-quality wines but can also help minimize the need for other interventions like de-acidification.

The QMUL team is currently seeking additional vineyards and agritech partners to further test their new device in the upcoming harvest season. Professor Lei Su noted the potential of RipenAI to influence the future of grape harvesting, especially in the context of the expanding British wine industry. The adaptability of this technology also extends to other fruits, such as apples and berries.

Overall, RipenAI represents a significant step forward for the wine industry, promising enhanced quality through technological integration.
