This Oregon white wine, known as Big Salt, has gained a dedicated following among wine enthusiasts and is now poised for greater recognition. It was first introduced in 2016 by John and Ksenija Kostic House, who had previously launched their Ovum brand in 2011. The inspiration for Big Salt came from the co-fermentation practices they observed during trips to Spain, where they saw the potential for creating something unique beyond the renowned Willamette Valley wines.

Big Salt is an economical offering; despite its quality derived from premium vineyards, it is priced around $20. The brand has expanded its lineup to include variations such as PNK Salt and an Orange Rosé, yet it retains an air of exclusivity, often known only to those in the know within the wine community.
