This Oregon White Wine is Gaining Cult Status—Get Ready for Its Big Break!

This Oregon white wine, known as Big Salt, has gained a dedicated following among wine enthusiasts and is now poised for greater recognition. It was first introduced in 2016 by John and Ksenija Kostic House, who had previously launched their Ovum brand in 2011. The inspiration for Big Salt came from the co-fermentation practices they observed during trips to Spain, where they saw the potential for creating something unique beyond the renowned Willamette Valley wines.

The moment many have had with Big Salt is often transformative, characterized by its floral and fruity aromas, leading to a surprisingly saline and zesty taste that many compare to an awakening of the palate. Vonda Freeman, director of beverage programs for The Indigo Road Hospitality Group, recalls her first encounter with the wine as a moment of pause and realization, distinctly impressed by its complexity.

The wine distinguishes itself due to the co-fermentation process, which blends grapes from various vineyards, enhancing the aromatic profile compared to traditional single-varietal blends. John House likens this process to recording a live song, capturing the essence of the moment rather than piecing together individual tracks later.

Big Salt is an economical offering; despite its quality derived from premium vineyards, it is priced around $20. The brand has expanded its lineup to include variations such as PNK Salt and an Orange Rosé, yet it retains an air of exclusivity, often known only to those in the know within the wine community. As it prepares to reach a wider audience, Big Salt remains an emblem of authentic craftsmanship, delivering a unique tasting experience that resonates deeply with wine lovers.
